Broccoli Salad.
WHAT YOU WILL NEED.
300g broccoli florets cut in pieces
1 red or yellow pepper (approx. 200g) cut in pieces
1 apple (approx. 130g) cored, quartered and chopped
25 g extra virgin olive oil
15 g cider vinegar
1 tsp honey
1 ½ tsp whole grain mustard
1 tsp fine sea salt
½ tsp ground black pepper
METHOD.
It’s quick and easy! Simply chop everything into similar sized pieces, mix together and serve.
This is a great side to accompany your favourite meals. We love it served with a chicken burger and halloumi.
It would also work well as a quick packed lunch idea.
